Once packaged, the product should be promptly transferred to a low-temperature cold storage facility to minimize exposure to ambient temperatures and reduce quality degradation caused by temperature fluctuations.

Key Considerations in the Freezing Process for Cherries

  • First, raw materials must enter the cold chain as quickly as possible. Rapid pre-cooling helps reduce respiration rates and maintain fruit firmness.
  • Second, minimize mechanical damage. Cherry skins and flesh are delicate; processes such as loading, conveying, washing, and grading should avoid excessive drops, crushing, or violent impacts.
  • Third, strictly control the hygiene of the washing water. The water used for washing should be filtered, recirculated, and changed regularly in accordance with production requirements to prevent cross-contamination caused by contaminated water.
  • Fourth, control surface moisture prior to freezing. If cherries carry excessive surface moisture before entering the cherry freezing equipment, they are prone to icing and clumping; consequently, draining and air-drying are crucial steps for optimizing the quick-freezing outcome.
