Frozen passion fruit pulp is a key product form resulting from the deep processing of passion fruit. Compared to selling fresh fruit directly, processing it into pulp reduces losses during transport and storage while facilitating standardized ingredient use for manufacturers of beverages, juices, ice cream, and other products. For passion fruit-producing regions, converting fresh fruit into frozen pulp also extends the commercial lifespan of the raw material and enhances the overall utilization rate of the fruit.
The frozen passion fruit pulp processing line is designed to process fresh passion fruit through a series of stages: inspection, grading, washing, pulp extraction (via fruit breaking), filtration, pasteurization, cooling, filling, quick-freezing, and cold storage. Precautions For Processing Frozen Passion Fruit Pulp:
- After processing, the passion fruit pulp should be cooled as quickly as possible to below 10°C. Rapid cooling minimizes oxidation, browning, and the loss of natural aroma, thereby establishing more stable processing conditions for subsequent pasteurization and filling.
- Pasteurization typically employs a process range of 75–85°C for 30–60 seconds; specific parameters should be validated based on the condition of raw materials, product formulation, equipment capabilities, and microbiological criteria. Rapid cooling is required after pasteurization to minimize the impact of prolonged high-temperature exposure on the fruit pulp’s color, flavor, and nutritional content.
- After filling, the passion fruit pulp undergoes a rapid freezing process. Temperatures can reach approximately -35°C, allowing the product to quickly achieve a stable frozen state. If the freezing process is too slow, the pulp is prone to quality degradation, which adversely affects its final color, flavor, and storage stability.
- The equipment configuration for a passion fruit pulp processing line is customized based on factors such as raw material characteristics, target production capacity, intended end-use, packaging methods, and cold chain requirements.
